Ingredients

  • Noodles or pasta of your choice: Choose any pasta or Asian noodles you prefer, like Chinese egg noodles, Japanese udon, ramen, spaghetti, linguine, or lo mein.
  • Ground beef 
  • Bell pepper 
  • Onion
  • Garlic
  • Fresh ginger
  • Spring onions
  • Cooking oil

For the seasoning

  • Regular soy sauce
  • Dark soy sauce:  Adds colour and a deeper, richer soy flavour. If unavailable, increase regular soy sauce slightly or add a touch of molasses for depth.
  • Oyster sauce
  • Cooking wine (optional)
  • Sesame oil
  • Black pepper
  • Chilli oil ( use store-bought or homemade chilli oil )

Variations

  • Add extra veggies: Toss in bell peppers, mushrooms, carrots, or broccoli for additional flavour and texture. 
  • Spice it Up: Add a dash of sriracha, gochujang, Shichimi chilli powder, fresh chilli slices, or crushed red chilli flakes for a spicier kick.
  • Try Different Noodles: Use rice noodles, udon, or soba for a unique twist on the texture and flavour.
  • Mix Up the Herbs: Add fresh cilantro, Thai basil, or a sprinkle of toasted sesame seeds for a fragrant finish.
  • Top with Extra Crunch: Garnish with crispy fried onions, fried garlic, roasted crushed peanuts, or cashews for added texture.

Top Tips

Cook noodles just al dente: Always cook noodles just until al dente. They will continue to cook slightly when mixed with the sauce and beef, so stopping at al dente prevents them from becoming mushy.

Dried noodles: Follow the package instructions for the boiling time. To avoid clumping, stir the noodles occasionally as they cook, and rinse with cold water briefly if they seem too sticky.

You can toss noodles lightly with oil to prevent sticking, especially if you're preparing them before mixing them with the sauce.

Don’t overcrowd the pan: Use a large pan. Give the beef enough room to brown properly and to prevent a steamy effect. 

Instructions

  1. Prepare the Noodles: Bring a pot of water to a boil, and cook the noodles until al dente according to package instructions. ( Reserve some noodle-boiling water for later use. )

  1. Sauté Aromatics: While the noodles are cooking, prepare the beef. Heat a bit of oil in a large pan over medium heat. Add chopped onions, garlic, ginger, and sauté until soft and fragrant.

  1. Cook the Ground Beef: Add the ground beef and stir until it starts to brown, breaking up any large chunks as it cooks.

  1. Add Seasonings: Pour in regular soy sauce, dark soy sauce, oyster sauce, and a splash of cooking wine. Combine well to evenly coat the ground beef and allow it to cook through.

  1. Combine with Noodles: Add the cooked noodles to the pan, tossing everything together. If the mixture seems thick, add a bit of the reserved water to loosen it.

  1. Finish with Final Seasonings: Drizzle with sesame oil, sprinkle with black pepper, spring onions, and chilli oil to taste. Mix and serve warm.

Note: If you are using fresh noodles, you can skip the noodle boiling step and add them straight to the pan. 

Prepare the noodles according to packet instructions and make sure not to overcook.

Storage & Reheating

Storage: To store leftover ground beef noodles, let the dish cool completely, then transfer it to an airtight container. It usually lasts in the refrigerator for up to 3 days. 

If you'd like to store it longer, you can freeze it for up to 2 months. Store it in a freezer-safe container, and let it thaw in the fridge overnight before reheating.

Reheating: To reheat, add a splash of water to the noodles and warm them in a pan over medium heat. Stir occasionally until the noodles are heated through. 

Alternatively, you can microwave the noodles in a microwave-safe dish with a bit of water, covered loosely, for 1-2 minutes, stirring halfway through for even heating. 

Freshen up the noodles with some fresh spring onions or coriander.

FAQ

Can I use a different type of meat instead of ground beef?

Absolutely! You can use ground chicken, turkey, pork, or even minced tofu or vegan mince for a vegetarian version. Adjust the cooking time for each type of protein.

What kind of noodles work best for this recipe?

You can use a variety of noodles like ramen, egg noodles, spaghetti, udon, or lo mein, depending on the texture you prefer. 

Fresh Asian noodles work wonderfully for an authentic taste, while dried pasta like linguine or spaghetti is a convenient alternative.

How can I adjust the spice level?

Ingredients

  • 250 gram Ground beef Minced beef
  • 140 gram Dried Noodles Pasta or a choice of noodles ( 2 servings )
  • 1 Onion Diced
  • 1 Bell pepper Diced
  • 1-2 Spring onions Scallions, cut thin slices
  • 2-3 tbsp Cooking oil

Seasonings

  • 2 tbsp Regular soy sauce
  • 1 tsp Dark soy sauce
  • 3 tbsp Oyster sauce
  • 2 tsp Shao Xing wine Or Mirin ( optional )
  • 1 tsp Sesame oil
  • 1 tbsp Chilli oil ( optional )
  • 1 tsp Black pepper

Instructions

  • Bring a pot of water to a boil, and cook the noodles until al dente according to package instructions. Drain, reserving some pasta water, and set aside. 
  • While the noodles cook, heat a bit of oil in a large pan over medium heat. Add chopped onions, garlic, ginger, and sauté until soft and fragrant.
  • Add the ground beef and stir until it starts to brown, breaking up any large chunks as it cooks.
  • Pour in regular soy sauce, dark soy sauce, oyster sauce, and a splash of cooking wine. Combine well to evenly coat the ground beef and allow it to cook through, blending the flavours.
  • Add the cooked noodles to the pan, tossing everything together. If the mixture seems thick, add a bit of the reserved pasta water to loosen it.
  • Drizzle with sesame oil, sprinkle with black pepper, spring onions, and chilli oil to taste. Mix and serve warm.

Notes

  • Vegetarian oyster sauce can be used as a substitute, or you can use hoisin sauce for a slightly sweeter taste.
  • Substitute ground beef with ground turkey, chicken, mashed tofu, mushroom, or plant-based meat if preferred.
  • If you have Shaoxing wine, use it or substitute it with Japanese mirin, dry sherry, or rice vinegar.
  • Sesame oil adds a nutty aroma; drizzle a bit as a finishing touch. If unavailable, leave it out or substitute it with a few toasted sesame seeds.
