Top Tips
Cook noodles just al dente: Always cook noodles just until al dente. They will continue to cook slightly when mixed with the sauce and beef, so stopping at al dente prevents them from becoming mushy.
Dried noodles: Follow the package instructions for the boiling time. To avoid clumping, stir the noodles occasionally as they cook, and rinse with cold water briefly if they seem too sticky.
You can toss noodles lightly with oil to prevent sticking, especially if you're preparing them before mixing them with the sauce.
Don’t overcrowd the pan: Use a large pan. Give the beef enough room to brown properly and to prevent a steamy effect.
Instructions
- Prepare the Noodles: Bring a pot of water to a boil, and cook the noodles until al dente according to package instructions. ( Reserve some noodle-boiling water for later use. )
- Sauté Aromatics: While the noodles are cooking, prepare the beef. Heat a bit of oil in a large pan over medium heat. Add chopped onions, garlic, ginger, and sauté until soft and fragrant.
- Cook the Ground Beef: Add the ground beef and stir until it starts to brown, breaking up any large chunks as it cooks.
- Add Seasonings: Pour in regular soy sauce, dark soy sauce, oyster sauce, and a splash of cooking wine. Combine well to evenly coat the ground beef and allow it to cook through.
- Combine with Noodles: Add the cooked noodles to the pan, tossing everything together. If the mixture seems thick, add a bit of the reserved water to loosen it.
- Finish with Final Seasonings: Drizzle with sesame oil, sprinkle with black pepper, spring onions, and chilli oil to taste. Mix and serve warm.
Note: If you are using fresh noodles, you can skip the noodle boiling step and add them straight to the pan.
Prepare the noodles according to packet instructions and make sure not to overcook.
Storage & Reheating
Storage: To store leftover ground beef noodles, let the dish cool completely, then transfer it to an airtight container. It usually lasts in the refrigerator for up to 3 days.

Ingredients
- 250 gram Ground beef Minced beef
- 140 gram Dried Noodles Pasta or a choice of noodles ( 2 servings )
- 1 Onion Diced
- 1 Bell pepper Diced
- 1-2 Spring onions Scallions, cut thin slices
- 2-3 tbsp Cooking oil
Seasonings
- 2 tbsp Regular soy sauce
- 1 tsp Dark soy sauce
- 3 tbsp Oyster sauce
- 2 tsp Shao Xing wine Or Mirin ( optional )
- 1 tsp Sesame oil
- 1 tbsp Chilli oil ( optional )
- 1 tsp Black pepper
