Simple Chinese Chicken and Green Bean Stir Fry recipe, packed with tender chicken, crisp green beans, and a savoury garlic and ginger sauce. Made with basic pantry ingredients, this dish is light, straightforward, flavorful, and perfect for a busy weeknight dinner!

Simply pair it with warm rice. It’s one of those comforting Asian stir-fry meals that come together quickly but never disappoint! Humble, tasty, cosy home-cooked dishes like this always feel better than takeout.
A Stir Fry That Feels Like Home
This chicken and green bean dish always reminds me of my grandma’s cooking. She never reached for a knife when working with green beans. After washing them, she would snap off the tips with her fingers and break them into shorter pieces.
She often made stir-fries like this with whatever protein she had. Some days it was chicken, other days it was shrimp, tofu, or mushrooms. Shrimp and Green Bean Stir Fry and Chicken and Rice Noodle Stir Fry (with green beans) are also a wonderful pairing and cook just as quickly, making them equally tasty.
Little Tips From Khin’s Kitchen
I always slice the chicken thinly so it stays tender and cooks fast over high heat.
Stir-frying works best when everything is ready before you start, so having your sauce mixed ahead of time makes the process smooth and stress-free.
Briefly blanching the green beans helps them stay bright green and slightly crunchy. It also cuts down the stir-fry time so everything cooks evenly. I’ve shared these tips in my previous restaurant-style Garlic Green Bean Stir Fry recipe. ( If you like Ding Tai Fung style green beans, it’s a must-try! )
Choosing and Preparing Green Beans
Fresh green beans make a big difference in this dish. Look for beans that are firm, smooth, and bright green. They should snap easily when bent.
Before cooking, wash them well and trim off the ends. You can cut them with a knife or simply snap them by hand, the way grandmas used to do.

What We Love to Serve It With

Most Asked Questions
How do I store this for meal prep?
Let the stir fry cool completely, then store it in an airtight container in the fridge for up to 3 days. Reheat gently in a pan with a small splash of water or oil, or use the microwave.
Can I skip blanching the green beans?
Yes, definitely. You can add raw green beans straight to the pan after sautéing the garlic and ginger. Stir fry until slightly tender, adding a small splash of water and covering the pan briefly if needed.
How can I make this stir-fry spicy?
You can easily add heat by stirring in chilli flakes, fresh sliced red chilli, or a spoon of chilli oil. Add it while stir-frying the chicken so the spice infuses into the dish.
Can I use frozen green beans?
Yes, frozen green beans can be used. Defrost them first, and pat dry to remove excess moisture. Add them directly to the pan and cook just until heated through to avoid a soft texture.
What goes well with this dish?
We love having it with steamed jasmine rice, brown rice, or simple Plain Chow Mein. For a complete meal, pair it with a light soup like egg drop soup or clear ABC chicken soup. You can also add simple main dishes and appetisers such as Steamed Cod Fish, dumplings, spring rolls, or Chinese cabbage rolls.
