Simple Chinese Chicken and Green Bean Stir Fry recipe, packed with tender chicken, crisp green beans, and a savoury garlic and ginger sauce. Made with basic pantry ingredients, this dish is light, straightforward, flavorful, and perfect for a busy weeknight dinner!

A Stir Fry That Feels Like Home

This chicken and green bean dish always reminds me of my grandma’s cooking. She never reached for a knife when working with green beans. After washing them, she would snap off the tips with her fingers and break them into shorter pieces.

She often made stir-fries like this with whatever protein she had. Some days it was chicken, other days it was shrimp, tofu, or mushrooms. I always slice the chicken thinly so it stays tender and cooks fast over high heat.

Stir-frying works best when everything is ready before you start, so having your sauce mixed ahead of time makes the process smooth and stress-free. 

Briefly blanching the green beans helps them stay bright green and slightly crunchy. It also cuts down the stir-fry time so everything cooks evenly. Choosing and Preparing Green Beans

Fresh green beans make a big difference in this dish. Look for beans that are firm, smooth, and bright green. They should snap easily when bent.

Before cooking, wash them well and trim off the ends. You can cut them with a knife or simply snap them by hand, the way grandmas used to do.

How to Stir Fry Chicken and Green Beans

  1. Prepare Green Beans: Wash the green beans, trim the ends, and cut them into 2-inch pieces.

  1. Blanch the Beans: Blanch them in boiling water for 2 minutes, then drain and set aside.

    Mix all the sauce ingredients in a small bowl. Slice the chicken into thin strips and season it with 1 tablespoon of the prepared sauce.

  1. Sauté Aromatics and Chicken: Heat a pan over medium-high heat. Add cooking oil and sauté the garlic and ginger until fragrant. Add the chicken and cook for 2 to 3 minutes, then flip and stir-fry for an additional 1 to 2 minutes, until fully cooked.

  1. Combine Everything with the Sauce: Add the blanched green beans and pour in the remaining sauce. Toss everything together and cook for another 1 to 2 minutes. Finish with sesame oil and serve immediately.

This chicken and green bean stir fry is delicious with steamed jasmine rice, brown rice, or simple noodles. It also pairs well with light soups like egg drop soup or ABC Soup, and simple appetisers such as Easy Rice Paper Dumplings, or Vegetable Spring Rolls for an easy home-style meal.

Leftovers can be stored in an airtight container in the fridge for up to 3 days.

Reheat gently in a pan or microwave. The green beans may soften slightly, but the flavours will still be delicious.

Equipment

  • 1 Large wok or pan

Ingredients

  • 200 grams Boneless chicken About 7oz ( boneless, skinless chicken breast or thigh )
  • 200 grams Green Beans About 7oz ( String bean, snap beans or French beans )
  • 3 cloves Garlic Minced
  • 1 tsp Ginger Minced
  • 1 tsp Sesame oil
  • 1 tbsp Cooking oil Neutral flavour cooking oil like sunflower, canola, peanut

Stir Fry Sauce

  • 1 tsp Dark soy sauce
  • 2 tbsp Light soy sauce
  • 2 tbsp Oyster sauce
  • ¼ tsp White pepper black pepper

Instructions

Prepare Green Beans

  • Wash and trim off the end tips of green beans. Cut them into 2-inch pieces. Blanch the green beans in the boiling water for 2 minutes and set it aside. 

Combine Sauce and Season Chicken

  • Combine sauce ingredients in a small bowl and mix it well. Cut chicken into thin strips or slices. Season the chicken with a tablespoon of prepared sauce mix. 

Stir Fry Aromatics and Chicken

  • Heat the pan over medium high heat, drizzle oil and saute minced garlic and ginger for a few seconds until fragrant comes out. Then add the chicken strips and let it sear for 2-3 minutes. Then flip the chicken and stir fry for another minute or 2 until no longer pink.

Toss Everything and Finish the Dish

  • Then add the blanched green beans and pour the sauce into the pan. Toss everything well to combine and cook for just another 1-2 minutes. Finish with sesame oil and serve immediately.

Notes

  • Green beans are also called string beans, snap beans, French beans or runner beans.
  • You can try this recipe with other types of beans, like regular long beans, snow peas, mangetout, or asparagus. 
  • Add fresh chilli slices or a drizzle of chilli oil for a spicy kick.
  • Garnish with sesame seeds or chopped spring onions for extra flavour and colour.
  • Tofu or mushrooms work well for a vegetarian version. ( Swap oyster sauce with hoisin sauce. )
  • Reduce soy sauce for a lighter taste or add more oyster sauce for a deeper flavour.
