This quick and easy Chinese beef fried rice recipe is one of my favourite quick meals and is so delicious! Made with minced beef, fluffy egg, jasmine rice, vegetables, and delicious sauce. Customize the protein and veggies and make it your own-style beef fried rice in 15 minutes!

15-Minute Beef Fried Rice

Yes! You can make beef fried rice at home in 15 minutes. Skip the meat velveting process and use the minced beef ( ground beef ) to prepare a fast and easy meal.

This fried rice recipe is perfect for quick lunch, brunch, or light dinner. A very versatile fried rice recipe that is adaptable to your liking. All you need to do is to gather all the ingredients before the cooking process starts. Minced meat, leftover cooked rice, choice of vegetables, and pantry-staple Chinese classic sauces.

Healthy, nutritious, and budget-friendly. Also great for meal-prep and lunch box. One of the best family-friendly dishes that both adults and kids can enjoy.

Prepare the ingredients

First of all, you need to gather and prepare minced meat, rice, vegetables, and seasoning sauces.

  • Cooked rice: Use your favourite long grain or medium grain cooked rice. A day-old cold leftover rice is ideal to make fried rice. Make sure to cook rice one day ahead as the freshly cooked rice is easy to get mushy when you stir fry it.
  • Fluffy eggs: I love to add fluffy eggs to my fried rice which brings more texture and colour to the dish.
  • Vegetables: Chop up the vegetables into small same-size cubes. I usually add carrots, onions, green peas, and spring onions. You can either use freshly cut veggies, or frozen mix vegetables of your choice.
  • Ginger & Garlic: Finely chopped fresh garlic is a must-add ingredient in making fried rice. Freshly grated ginger brings more flavour to the beef marinade.
  • Stir fry sauce: Light soy sauce, oyster sauce, Shao Xing wine, and sesame oil are 4 basic sauces you will need. Add a teaspoon of dark soy sauce, a tablespoon of sugar, and a dash of white pepper for extra flavour and colour. If you don't like your fried rice brown colour, you can omit dark soy sauce.

Variation

Light soy sauce - You can also use regular all-purpose soy sauce or low-sodium soy sauce according to your taste.
Oyster sauce - The oyster sauce is made from oyster extract, sugar, salt, soy sauce, and corn starch. It enhances the umami flavour of the dish. If you have a certain seafood allergy you can use vegetarian stir fry sauce ( mushroom stir fry sauce ). If you don't like oyster sauce flavour, you can add a teaspoon of chicken powder, dashi powder, or msg.

How to make it

  • First, chop up all the vegetables and combine all the stir fry sauce ingredients in a small bowl. Season the beef mince with a tablespoon of the sauce mixture, white pepper, and freshly grated ginger. Mix it well and set it aside.
  • Heat the wok over medium-high heat and stir fry the eggs and break them into small pieces. Then remove from wok and set it aside.

  • In the same pan, drizzle more oil and sauté the onions, garlic, and white part of spring onions for a few seconds.
  • Add the beef mince, flatten the beef and let it sear for 1-2 minutes. Then flip and stir fry the beef with high heat, until cooked through and no longer pink.
  • Then add the carrot and followed by green peas and cooked until the vegetables are crisp-tender.
  • Next, add the cooked rice and pour the sauce mixture in. Toss well and continue to stir fry with high heat for 1-2 minutes or until everything is cooked through.
  • Turn off the heat and add scrambled eggs and green part of spring onions. Combine everything well. Make a taste test and add extra salt or pepper to your taste.
  • Transfer to a serving plate, garnish with chopped spring onions, and serve immediately! Enjoy!

Note

Do not recommend using olive oil or flavoured cooking oil that can overpower the dish. Vegetable oil or neutral flavoured oil is ideal for making Chinese beef fried rice.

We don't usually add extra salt as the soy sauces and oyster sauce contain salt. Individual soy sauce brands contain different salt content, so you might want to make a taste test and adjust the salt or soy sauce before serving.

If you love a kick of heat, add a teaspoon of Crispy Chilli Oil just right before serving. We like to add some crispy fried onions or garlic as a topping.

FAQ

What type of rice to use?

If you have read our previous blog posts, you might already know that we love to make Chinese fried rice with jasmine rice. But feel free to use your choice of white rice, brown rice, or basmati rice.

Why do you need to cook with day-old rice?

A day-old cold rice is drier than freshly cooked rice and brings the best texture. Freshly cooked rice is easy to get mushy and creates clumps.

What type of wok to use?


You don't need traditional Chinese carbon steel wok for this recipe. Use any large non-stick wok, or skillet that you can toss everything and that can distribute heat evenly to all ingredients.

What to serve with it?

You can serve this dish on its own or pair it with other stir fries or soups. If you are preparing a complete dinner, here are some of my favourite recipes that you can try out: Chinese Egg and Tomato Soup, Hot and Sour Soup and Chinese Lettuce Wrap ( Yuk Sung )

Equipment

  • Large wok or pan

Ingredients

  • 200 gram Beef mince About 7oz, ( Beef, chicken, lamb or mince meat of your choice. )
  • 3 cup Cooked rice Leftover or a day-old cold cooked rice, ( About 200 g or 2 servings )
  • ½ tsp White pepper
  • 2-3 cloves Garlic Finely chopped
  • 2 tsp Ginger paste Or finely grated ginger
  • 1 Carrot Cut small cubes
  • 100 gram Frozen green peas About ⅔ cup
  • ½ Onion Cut small cubes
  • 3-4 Spring onions Cut thin slices, separate white part and green part
  • 2 Eggs Whisked
  • 2-3 tbsp Oil Vegetable or neutral flavour oil

Stir fry sauce

  • 2 tbsp Light soy sauce Or all purpose soy sauce
  • 2 tbsp Oyster sauce Or vegetarian stir fry sauce
  • 1 tbsp Sugar
  • 1 tsp Dark soy sauce
  • 1 tsp Sesame oil Toasted sesame oil
  • 1 tbsp Shao Xing wine Chinese cooking rice wine or Japanese mirin
  • ½ tsp White pepper Or black pepper

Instructions

  • First, combine all the stir fry sauce ingredients in a small bowl. Gather and prepare all the vegetables.
  • Season the beef with a tablespoon of the stir fry sauce mixture, white pepper, and grated ginger. Mix it well and set it aside.
  • Over medium-high heat and stir fry the eggs and break them into small pieces. Then remove from heat and set it aside.
  • Add more oil in the same pan and sauté the onions. Follow with the garlic, and white part of spring onions and stir it for a few seconds.
  • Add the marinated beef mince, flatten the beef at the bottom of the wok and let it sear for 1-2 minutes. Then flip and continue stir fry the beef with high heat, until cooked through and no longer pink. Add the carrots and follow with green peas and cook until the vegetables are crisp-tender.
  • Next, add the cooked rice and pour the sauce mixture in. Combine well and continue to stir fry with high heat for 1-2 minutes or until everything is cooked through.
  • Turn off the heat and add scrambled eggs and green part of spring onions. Toss everything well.
  • Transfer to a serving plate, garnish with chopped spring onions, and serve immediately! Enjoy!

Notes

  • Add a day-old cold, cooked rice for the best fluffy fried rice texture. We love making fried rice with jasmine rice but any long grain or short grain rice can be used. 
  • You can swap beef mince with your choice of ground meat, or small dice of meat. 
  • As the stir fry sauces contain salt content we didn't add any salt to the fried rice. Make a taste test and adjust the salt, pepper, and soy sauce to your taste before serving.

    Cooked it last night. It was so delicious. I normally cook fried rice with sliced beef but your version of ground beef fried rice is much quicker and easier. I added sweet soy sauce because I didn’t have oyster sauce. Thank you for this delicious recipe.
