1tspDark soy sauce
3tbspOyster sauce
2tspShao Xing wineOr Mirin ( optional )

1tbspChilli oil( optional )

Instructions
Bring a pot of water to a boil, and cook the noodles until al dente according to package instructions. Drain, reserving some pasta water, and set aside.
While the noodles cook, heat a bit of oil in a large pan over medium heat. Add chopped onions, garlic, ginger, and sauté until soft and fragrant.
Add the ground beef and stir until it starts to brown, breaking up any large chunks as it cooks.
Pour in regular soy sauce, dark soy sauce, oyster sauce, and a splash of cooking wine. Combine well to evenly coat the ground beef and allow it to cook through, blending the flavours.
Add the cooked noodles to the pan, tossing everything together. If the mixture seems thick, add a bit of the reserved pasta water to loosen it.
Drizzle with sesame oil, sprinkle with black pepper, spring onions, and chilli oil to taste. Mix and serve warm.
Notes
Vegetarian oyster sauce can be used as a substitute, or you can use hoisin sauce for a slightly sweeter taste.
Substitute ground beef with ground turkey, chicken, mashed tofu, mushroom, or plant-based meat if preferred.
If you have Shaoxing wine, use it or substitute it with Japanese mirin, dry sherry, or rice vinegar.
Sesame oil adds a nutty aroma; drizzle a bit as a finishing touch. If unavailable, leave it out or substitute it with a few toasted sesame seeds.
