Spring roll is a very popular appetizer across the world and every country has their own version of it. Savoury, meat and vegetables fillings wrapped in a rice or wheat pastry sheet. Chinese style spring roll are deep fried until the skin is crispy golden and the fillings are usually made with meat and vegetables. Vietnamese spring rolls are made with translucent rice paper sheets and can be eaten fresh without deep frying.

What is the difference of Spring roll and Egg roll?
Spring roll wrappers are thin pastry paper like sheets, made from wheat or rice flour with water. While egg rolls are thicker pastry sheets made from egg and flour dough.
What Goes in The Chicken Spring Rolls ?
- Protein : I usually use boneless chicken breast cut in small dices. You can use chicken thigh, prawns, lamb, beef or any tender meat cut in small pieces or minced.
For vegetarian options, you can use frim tofu cut in small cubes and add mushroom or vegetarian oyster sauce instead of oyster sauce. - Vegetables : Shredded cabbage, carrot, sweet corn, spring onions and bean sprouts are ideal for fillings. You can add extra vegetables like mushrooms, green beans, bamboo shoots, etc.
- Spring roll wrapper : I use TJY spring roll pastry (250mm square sheet) which is a very famous pastry brand and can easily buy at local supermarket or online.
- Seasonings : I usually add a bit of soy sauce, oyster sauce, sesame oil and salt to taste. Sweetness from the chicken and vegetables are tasty without adding much seasonings.
Customise Your Spring Rolls
You don't need to use all ingredients that is used in this recipe. You can experiment your own-style spring roll by pick up your favourite protein and vegetables.
Can you freeze the spring rolls?
Yes, you can. Place the wrapped spring rolls on the tray and freeze then until they are sold. Then pack them in air tight freezer bags or containers. It last for up to one month in a freezer. When you are ready to cook, you can fry them straight away in the medium pre-heated oil, no defrosting is needed.
How To Serve It
Chicken spring rolls are simply delicious on its own. But you can serve with simple hot chilli sauce, sweet chilli sauce, Sriracha sauce, chilli garlic sauce or any of your favourite dipping sauce.
How To Make Chicken Spring Roll :
First of all cut the chicken breast into tiny pieces. ( You can use chicken mince, prawns or any protein of your choice. )
Julienne the garlic and ginger slices. Julienne the carrot and thinly slice the cabbage.
Drizzle a tablespoon of oil in a pan and stir fry two eggs. Transfer to plate and set aside.
Add a bit more oil into the pan and stir fry the garlic for a few seconds then add the ginger slices and stir fry for a few seconds. Add the chicken and stir fry for 1-2 mins with medium-high heat.
Then add the carrot and stir for a few seconds, then follow with the sweet corn cook for another 1 min. Then add the cabbage slices and pour the soy sauce, oyster sauce, sesame oil and salt to taste.
Mix all the ingredients well and continue stir fry with high heat for 1 min. Then add the spring onions and fried egg, stir well to combine evenly.
Remove from heat, transfer to tray/bowl to cool down for a few minutes.
( If the liquid from the vegetables are still remaining in the bowl, put the fillings in a strainer and drain all the liquid out. )
To wrap the rolls, scoop one tablespoon of filling on the one side of the wrapper. Fold away from your side like an envelope. Seal it up with the corn flour and water mixture. Repeat the process to all rolls until the filling runs out.
Preheat oil to 350' F and deep fry the spring roll till golden brown. Remove from oil and transfer to a serving plate. Serve with your choice of favourite hot or sweet chilli sauce.

Chicken Spring Rolls
Ingredients
- 150 g Boneless chicken thigh/breast
- 10-12 sheets Spring rolls wrapper (250mm x 250 mm)
- 2-3 cloves Garlic
- 2-3 slices Ginger

- Corn/Potato flour + water 1 tbsp ( to seal the wrapper )

- 1 tbsp Light soy sauce
- 1 tbsp Oyster Sauce
- 1 tsp Sesame oil
- ½ tsp Salt

Hi Judy, Thanks for trying out our spring roll recipe. To bake it, brush or spray a generous amount of cooking oil on the rolls. Fry it in a (400°F/200°C) pre-heated oven or air-fryer, and bake for about 15 minutes or until crispy golden. Turn sides halfway through.
