Homemade wontons with homemade chicken broth sound like a lot of prep-work but I promise your effort is worth it! Texture and fillings of homemade wontons can beat any of the store-bought or takeout ones.

What do we need
Wonton fillings: I use chicken thigh mince in this recipe. You can also try it out with minced chicken breast, pork or prawns. Or you can also add a mixture of chicken with prawns or pork with prawns. You will also need finely chopped spring onions, finely grated garlic and ginger.
Wonton seasonings: Simply season the fillings with soy sauce, white pepper, sesame oil, salt and sugar.
Wonton Wrappers: Wonton wrappers are also known as wonton skins and is made of flour, egg and water. Cut into round or square sheets. Available in Oriental Asian grocery stores and supermarkets. I use store-bought wonton wrappers to save some time.
Egg/wonton Noodles: Wonton noodles are very similar to angel hair pasta and is also made from flour, egg and water. The colour is bright yellow. You can use any thin egg noodles, dried or fresh. Boil the noodles by the packet instructions before serving.
Vegetables: Top the noodle soup with blanched bok choi or pak choi and chopped spring onions.
Chicken Broth: Make homemade chicken broth seasoned with ginger, garlic, spring onions, soy sauce, sesame oil, sugar, and salt. You can also try out with store-bought chicken stock/broth seasoned with Asian seasonings.
How to make wonton noodle soup
1. Make the chicken soup
Fill a large pot with 5 cups of water. Add chicken, garlic, ginger slices and spring onion. Let it boil with high heat for 1 to 2 mins until it starts bubbling.
If there is any foam that comes up to the surface, skim it with a strainer. Reduce the heat and let it simmer for about 45 mins.
Strain all the ingredients out from the soup. Season with light soy sauce, salt, sugar, sesame oil and black pepper in. You can add extra chicken or vegetable stock/cubes for a more bold taste and flavour but that is totally optional.
Make a taste test and add some salt or sugar if needed.
Keep the soup warm. You can shred the chicken meat from the bones and put it back in the soup or you can add in noodles soup topping.
2. Make wontons
In a large mixing bowl, add chicken mince, chopped spring onions, finely grated ginger, garlic, seasoning sauce and spices. Mix well to combine all ingredients until the fillings become a sticky paste.
To wrap the wontons, place the wonton wrapper in your palm, add 1 teaspoon of fillings in the middle of the wrapper. Wet the edges of the wonton paper with water. Fold the wonton into a triangle shape, press the edges to seal it. Pull the corners of the triangle and wet one side and overlap the corners and press hard to seal it.
Blanch noodles and vegetables
In hot boiling water, boil the wontons for 4-5 mins. Blanch the noodles and pak choy for 1-2 mins to soften it.
To Serve
Place the noodles in the bottom of the bowl, topped with wontons and pak choi. Pour the soup in. Sprinkle chopped spring onions on top.
Cooking Tips
- You can make the wontons in advance and freeze it and use it in many different ways. You can add in any soup, you can steam it or fry it and serve with your favourite dipping sauce.
- Do not blanch the noodles and wontons in the chicken soup, as the soup can get starchy and cloudy. Blanch them in the separate boiling water.
FAQ
Yes, you can cook the chicken broth and wontons ahead. Store it in an airtight container in the fridge or freezer. Reheat the chicken broth until piping hot just before serving. Boil the wontons in the hot boiling water until soft, no need to defrost.
You can simply serve on its own or pair it with Crispy Chilli Beef, Salt and Pepper Tofu, Singapore Fried Rice, or Crispy Salt and Chilli Chicken and make it a wholesome dinner.

Ingredients
Chicken Soup Ingredients
- 200 g Chicken with bones about 7oz ( Bone in chicken pieces )
- 2 cloves Garlic smashed
- 2 slices Ginger
- 1-2 stalk Spring onion
- 4-5 cup Water about 1 litre
- 1½ tbsp Light soy sauce
- ½ tsp Salt
- 1 tbsp Sugar
- ¼ tsp Black pepper
- ½ tsp Sesame oil
- ½ - 1 Chicken/vegetable stock cube Optional
Wonton Ingredients
- 200 g Chicken Mince
- ½ cup Chopped spring onions
- 20-25 Wonton wrapper/skin
- 1 tsp Garlic finely grated
- ½ tsp Ginger finely grated
- 1 tsp Light soy sauce
- 1 tsp Sesame oil
- 1 tsp Sugar
- ¼ tsp White pepper
- ½ tsp Salt
- 2 tsp Corn/potato flour
To Serve
- 4 servings Egg noodles fresh or bolied
- Pak choy/ Bok Choy or any green
- Spring Onion for garnish
Chilli Dipping Sauce
- 1 tbsp Rice/white vinegar
- 1 tbsp Light soy sauce
- 1 tbsp Chilli oil
- 1 tsp Sugar

Chilli Dipping Sauce
- To make the chilli dipping sauce, mix all the chilli sauce ingredients in a small bowl. You can dip the wontons in chilli sauce or you can add in the soup for a kick of spice.

You did it again! Thank you, SPOT on. But I will admit I used inexpensive chicken stock instead of water. I never get a good stock, even out of good or popular recipes. Because of my diabetic needs (I just use the broth w/Bok Choy & carrots plus Char Siu and chicken as protein, no pasta) I like to have this stock and egg drop soup as fillers.
