A very popular Thai tom yum soup recipe, loved by many people around the world. This soup is spicy, sour, healthy and full of Thai flavours. Perfect combination of prawns, chicken and herbs in one bowl. You can make this soup in less then 30mins. You will amazed how easy and simple to make at home. I made this recipe with both chicken and prawns for extra flavour but you can either use chicken or prawn. You can add any of your choice of protein, prawns or chicken.
Tom yum is one of the most famous Asian soups in the world. There are many different methods to make tom yum soup. I made this recipe as simplest as possible. I've used the store bought tom yum paste and Thai chilli oil paste. To bring more flavour to the soup I've added few extra herbs, galangal, lemongrass, kaffir lime leaves, etc. And I added a bit of evaporated milk to make it creamy version. If you prefer the clear soup you can exclude the evaporated milk. If you cannot find all ingredients, just add the herbs available at your local stores. Tom yum paste already has whole lots of herb ingredients in it. You can find tom yum paste and chilli oil paste in most Oriental grocery store or supermarket Asian counters.
You can have the tom yum soup on its own or add some noodles and make it a delicious hearty tom yum noodle soup. I love to have with rice noodles in it. Cut the chicken into thin slices. slice the mushroom into half and cut tomato into small cubes. Cut galangal into thin slices and lightly bruise the lemongrass and cut into two pieces.
Discard the centre part of kaffir lime leaves and cut the red chillies into half.
Pour water and chicken stock in the pot. Bring it to boil, add lemongrass, galangal, tom yum paste and chilli paste in. Stir well and let it boil for few seconds.
Add the chicken slices in, follow with the mushrooms. Continue simmer for 1 min.
Then add the prawns and tomatoes in. Add fish sauce and sugar and stir well. Continue cook for another 1-2 mins until the prawns are cooked.
Add evaporated milk in, stir well and simmer for another 1 min. ( You can skip this step if you like the clear soup.) Add red chillies and kaffir lime leaves. Turn off heat and let it sit for 1-2 mins. Then squeeze half lime juice in. Taste test the soup, and add more salt, sugar or lime juice according to your taste.
Transfer to soup bowl and garnish with fresh coriander.
You can make tom yum noodle soup by adding boiled/fresh noodle. Boil noodles per packet instructions, drain the water out. Place in a bowl, pour the tom yum soup in, garnish with fresh coriander. Enjoy!

Tom Yum Soup & Noodles
Ingredients
Soup Base
- 3 cup Water
- 1 cup Chicken stock/broth
- 2 tbsp Tom yum paste
- 1 tbsp Thai chilli paste in oil
- 1 stalk Lemongrass
- 3 slices Galangal
- 1 tbsp Sugar
- 3 tbsp Fish sauce
- 3 tbsp Evaporated milk

- 200 g Prawns peeled and deveined
- 100 g Mushroom
- 1 Tomato
- 3 Red/bird eye chillies
- 2-3 Kaffir lime leaves
- ½ Fresh lime
- 100 g Dry rice noodles 5mm
