The best Asian crispy fried fish with sweet chilli sauce! This recipe is a perfect combination of crispy seabass fillets and vegetables with spicy, sweet, & sour sauce. Super quick and easy to make at home in under 30 minutes!
Sea bass is one of the white fish, which is tender, moist, and buttery, very similar to cod and haddock. Milder in fishy flavour, if you don't like the strong fish flavour, sea bass is a good choice. I use sea bass fillets instead of whole fish for this fast recipe.
If you are tired of regular Asian pan-fried sea bass recipes, it's time to try out this sweet and sour version of sea bass with a kick of chilli, Chinese steamed fish made with whole seabass steamed to perfection or our reader's favourite sweet and sour fish recipe.
Ingredients we need
- Fish - We usually use sea bass fillets. You can fry with skin or remove skin according to your preference. Haddock, sea bream, cod, or red snapper fish fillets work well for this recipe.
- Vegetables - Onion, bell pepper, spring onions are perfect match. Feel free to add any of your favourite stir fry vegetables like sugar peas, baby corn, bambo shoots, green beans, carrots, etc.
- Sweet chilli sauce - You will need, tomato ketchup, sweet chilli sauce, sugar, soy sauce, and a bit of corn starch to thicken the sauce. If you love to make it more saucey you can double the amount of ingredients.
- Sauce variations - You can adjust the sauce flavour by adding more or less sauces. If you prefer it a bit spicy, add dried red chilli flakes in the sauce mix. For more sour taste, add a tablespoon of lime juice.
How to make it
First of all, prepare the vegetables, cut bell peppers and onion into medium size cubes. Cut spring onions into 1" pieces, finely chop the garlic.
Combine all the sauce ingredients in a small bowl. Mix well and set aside.
Pat dry the fish fillets with a paper towel, season with salt and black pepper. Rub to both sides of fillets.
Add corn/potato flour in the tray. Dredge the fish fillets well in the flour and toss the excess flour out before frying.
Heat the oil to 350 F, you can test the oil temperature with a wooden chopstick, when the oil bubbles start to fizz steadily, it's ready to fry the fish. Add the coated fish fillet slowly and fry each side for 2-3 mins or until the crust and fish become crispy.
Remove from oil and transfer to paper towel or cooling rack.
Add a tablespoon of oil to a pan, add chopped garlic and stir for few seconds until light brown. Then add the onion and bell pepper in, stir for few seconds. Pour the sauce mixture and water in. Let it simmer for few seconds.
When the sauce starts to thick, turn off the heat and add the spring onions in, stir well.
Place the fried fish on the serving plate. Pour the sauce over the crispy fish. Serve with steamed rice or stir fry noodle. Enjoy!
How to serve this dish
Simply serve with plain jasmine rice, egg fried rice, stir fry noodles or pair it with Chicken Corn Soup, Salt and Pepper Tofu, Crispy Orange Beef or Crispy Honey Shrimp and make a wholesome dinner.

Crispy Sweet Chilli Fish
Ingredients
- 2 fillets Sea bass
- ½ tsp Salt
- ¼ tsp Black pepper

- ½ Onion
- ½ Red Pepper
- ½ Green Pepper

- 3 tbsp Ketchup
- 2 tbsp Sweet chilli sauce
- 2 tbsp Sugar
- 1 tbsp Light soy sauce
- 1 tsp Corn/Potato flour

- How to make more sauce? You can double or triple the sauce ingredients.
- How to make it spicier? Add dried red chilli flakes in the sauce mixture or add extra fresh chillies after stir-frying the onions and peppers.
- Sea bass fillets - You can use sea bream, cod, haddock or any white fish fillets of your choice, skin on or off. You can remove fish skin according to your preference.
- Sweet Chilli Sauce - We usually use Thai sweet chilli sauce like Mae Ploy, Healthy Boy, you can use your favourite brands.
