Ingredients
Following is a quick guide. Please scroll and see the recipe card for the measurements.
- Cold Cooked Rice: If you’ve tried my previous fried rice recipes, you might already know that I love to use leftover day-old cold rice in my fried rice.
- It’s a secret to achieve to perfect rice texture and less mushy when you make a stir fry.
- What type of rice to use? Regular long-grain rice, Chinese long-grain rice, and Thai jasmine rice are my favourites. I don’t usually use basmati rice in my Chinese and Thai fried rice recipes, except in Indian-style masala fried rice like Keema Rice.
- Spam: Add your spam choice: pork, chicken, or turkey.
- Vegetables: Onions, garlic, green peas, sweet corn, spring onions ( green onions ), carrots. You can either use fresh or frozen vegetables.
- Seasonings: Soy sauce, chicken powder, sesame oil, and white pepper.
Tips for the best Spam Fried Rice
- Use cold refrigerated rice which is less in moisture and harder than freshly cooked rice.
- Prepare all the ingredients before you heat the wok, as this is a fast stir-fry.
- Start by adding the firmer vegetables first and follow with the softer ones so they cook evenly.
- You don’t have to add the same vegetables I’ve added to this recipe. Personalize it with your favourite veggies.
Instructions
- First, cut the spam into small, even cubes, prepare the vegetables and set them aside.
- Heat the large wok or pan over medium-high heat. Drizzle oil and saute the spam for 1-2 minutes until slightly brown.
- Then add the chopped garlic and onion and stir fry for a few seconds until fragrant. Follow with the sweet corn, carrot, and green peas.
- Push the vegetables to one side of the pan and pour the whisked egg.
- Once the egg is set at the bottom, break it into small pieces.
- Next, add the cooked rice and season the dish with soy sauce, chicken powder, and white pepper. Combine everything well and stir fry for another 1-2 minutes.
- Drizzle sesame oil and sprinkle spring onions.
- Make a final quick toss, turn off the heat, and enjoy!
You can also add these:
- More Veggies! Broccoli, bok choi, cauliflower, bell peppers, green beans, or snow peas for added colour and texture.
- Add some Korean kimchi or Chinese pickled mustard for a tangy umami kick.
- You can also make Hawaiian-style spam fried rice by adding pineapple chunks.
- Add a drizzle of crispy homemade chilli oil, Lao Gan Ma chilli oil, or Sriracha sauce for a kick of heat. I love to add fresh bird-eye chillies sometimes.
Serving and Storage
For a complete family dinner, serve spam fried rice alongside classic Chinese dishes like, Sweet and Sour chicken, Egg Drop Tomato Soup, Spring Rolls, or Siu Mai.
Just like other fried rice, you need to cool it down first before adding it to the freezer-safe bag or container. Then, keep it in the fridge or freezer for later use. It can last in the fridge for up to 3 days or in the freezer for up to 1 month.
Recipe FAQs
What is Spam?
Spam is tinned luncheon meat primarily made from pork with seasonings such as salt, sugar, water, etc. If you haven't tried spam, it has a savoury, salty taste and a hint of smokiness.
It originated in the US and was introduced to Korea during the Korean War, and it became popular in Korea and across the world.
There is also halal spam or luncheon meat made from chicken or turkey. For vegetarians, vegan meat-free spam is a great option.
What is the substitute for spam?
Different types of sausages and luncheon meat can be used instead of spam, such as Chinese lap cheong, Italian sausage, Turkish sausage, chorizo, frankfurters, etc.
The flavour might be slightly different but adding various sausages to fried rice will bring different textures and flavours.
