Mushroom has a unique savoury, rich, meaty taste, and it goes really well with most stir-fried rice, noodles, and pasta dishes. Mushroom Chow Mein and Mushroom Pasta are my go-to quick and easy dinner recipes loaded with mushrooms.

Rice and Stir Fry Ingredients
- Mixed mushroom
- Cooked rice: Use leftover rice or a day-old cooked rice.
- Green peas: Fresh or frozen green peas. Frozen peas should be defrosted, and excess moisture should be removed from the peas with a paper towel.
- Garlic
- Onion
- Spring onions ( scallions/green onion )
- Cooking oil: vegetable or neutral flavour oil
Seasonings & Sauces
- Light soy sauce
- Dark soy sauce
- Vegetarian stir fry sauce ( mushroom sauce ) or oyster sauce
- White pepper
- Chilli oil: you can use homemade chilli oil or store-bought ones like Lao Gan Ma crispy chilli oil. Feel free to omit it if you prefer the fried rice mild.
- Toasted sesame oil
Prepare The Mushrooms
The best mushrooms for fried rice are portobello, shiitake, oyster, porcini, etc. Each mushroom has a different texture and flavour but is generally similar.
I used an assortment of fresh mushrooms. You can use any of your favourite meaty mushrooms or add a variety.
Clean the mushrooms by wiping off the dirt with a paper towel or clean cloth. If any stubborn dirt is left, rinse it off with cold water, then pat dry it with a paper towel to remove excess water.
Then, trim off the hard end of button mushrooms or portobello mushrooms. Then, cut them into half-inch slices.
How to Make Mushroom Fried Rice
- Heat the large wok or pan over medium-high heat, drizzle oil and add mushroom slices. Saute the mushroom for 2-3 minutes until slightly brown. Add garlic and onion and stir fry for 1-2 minutes until fragrant.
- Add green peas and rice. Season it with light soy sauce, dark soy sauce, white pepper, vegetarian stir fry sauce, and sesame oil. Combine everything well and cook for 1-2 minutes.
- Finish with the spring onions and drizzle crispy chilli oil.
- Turn off the heat and make a final quick toss. Transfer to a serving plate and serve immediately.
Recipe Notes
- As this is a quick one-pan stir fry recipe, prepare all the ingredients before you start cooking.
- Use a large wok or skillet pan to saute the mushrooms and rice. Overcrowding the pan will create a steamy effect, and it will take longer for the mushrooms to get charred.
- Saute the mushroom first before adding the rest of the vegetables and rice.
- Adding vegetarian stir fry sauce or oyster sauce is the key to making the fried rice more tasty and umami. You can also use msg or chicken powder instead.
- If you find the stir fry sauces are salty, you can use low-sodium soy sauces.
- You can also use dried shiitake, which you can always keep in your pantry and cook anytime. Dried shiitake has a chewy texture and goes well in stir fry and soup dishes.
Common Questions
How to make non-mushy fried rice?
A day-old cold rice always works for my fried rice recipes, and it’s also important to use long-grain rice but not glutinous rice. I love using Thai jasmine rice, but some people find it stickier than regular Chinese or American long-grain rice.
Can I use basmati rice?
We don’t usually use basmati to make Chinese fried rice, except in Indian-style fried rice recipes like Keema Rice. Basmati is drier and has less starch than regular long-grain rice, and I don’t find it goes well with Chinese stir-fry sauces.
What to serve together with mushroom fried rice?
To make a simple, complete dinner, pair it with Chinese tomato egg drop soup, Siu Mai ( Chinese steamed dumplings ), Salt and Pepper Fish, Char Siu Chicken or a choice of Chinese Stir Fry dishes.

Mushroom Fried Rice
Equipment
- 1 Large wok or pan
Ingredients
- 3 cup Cooked rice Cooked jasmine rice or long-grain rice. About 2 servings of cooked rice.
- 220 grams Mushroom Shiitake, portobello, oyster, buttom mushroom etc. Add a choice of mixed meaty mushrooms.
- 1 cup Green peas Defrosted green peas or garden peas
- 3 cloves Garlic Finely chopped
- ½ Onion Cut small dices
- 2-3 Spring onions Green onion, cut thin slices
- 3 tbsp Cooking oil Sunflower, vegetable or neutral flavourful oil
Seasoning Ingredients
- 3 tbsp Vegetarian stir fry sauce Mushroom sauce ( available in Lee Kum Kee brands )
- 2 tbsp Light soy sauce Or regular soy sauce
- 1 tsp Dark soy sauce
- 1 tsp Sesame oil Toasted sesame oil
- ½ tsp White pepper or black pepper
- 1 tbsp Chilli oil Optional
Instructions
- Heat the large wok or pan over medium-high heat, drizzle oil and add mushroom slices. Saute the mushroom for 2-3 minutes until slightly brown.
- Add garlic and onion and continue stir fry for 1-2 minutes until fragrant.
- Add green peas and rice. Season it with light soy sauce, dark soy sauce, white pepper, vegetarian stir fry sauce, and sesame oil. Combine everything well and cook for 1-2 minutes.
- Finish with the spring onions and drizzle crispy chilli oil. Turn off the heat and make a final quick toss. Transfer to a serving plate and serve immediately.
Notes
- You can clean the mushroom with a paper towel or a clean cloth. If you've washed the mushroom with water, make sure to pat dry with a paper towel to remove excess moisture.
- Do I need to use carbon steel wok? You don’t need to use traditional Chinese wok for this recipe. Any large wok or pan would work perfectly well. I used a large non-stick wok for this recipe.
- Do not overload the pan if you are cooking for a bigger batch. Stir fry with batches to prevent the rice and mushrooms from getting mushy and soggy.
- Use dry day-old rice for the best texture fried rice.
- Long-grain white rice is perfect for making mushroom fried rice. For this recipe, we usually use jasmine rice, Chinese or regular long-grain rice.
- Instead of vegetarian stir fry sauce, you can use regular oyster sauce.
- What type of chilli oil to use? Adding chilli oil brings a kick of heat but it is optional. I used homemade chilli oil or Lao Gan Ma crispy chilli oil, whatever I've got in hand. Instead of chilli oil, you can add dried crushed chillies with garlic and onions.
