Sausage Fried Rice

Easy sausage fried rice recipe with jasmine rice, sausages, carrots, spring onions, and simple seasonings. You can customize this recipe with your favourite protein or vegetables and make it your own!

What do you cook when you have only a few minutes to make dinner? One of the dishes I often make is this easy sausage fried rice. It's so easy to make and prep time is faster than ordering from your local takeout. Who needs takeout when you can make a bowl of tasty fried rice in 20 minutes.

When I was a kid my mom used to make sausage fried rice lunchbox for us on her busy days. One of our favourite go-to fried rice recipes that all kids and adults in our family love.

One of the great ways to use leftover rice and vegetables. Good for meal prep and lunch box too. With just a few pantry friendly ingredients, you can cook up an amazingly delicious dinner with no hassle.

Simple ingredients that you need

Sausage/Spam

As this dish is very versatile, you can add of your favourite types of sausage or spam, which you can easily get in your pantry. The most popular sausage fried rice recipes are made with Chinese Lap Cheong, spam, breakfast sausage, and frankfurters. One of my friends said she made it with chorizo and it was really delicious. Ground meat goes well too.

Some people do not like sausage and spam because they are not so healthy food but I like them. I love to add in my fried rice, fried noodles, and instant ramen.

Can I make it vegetarian? Yes, you can try with small dices of tofu or vegetarian sausage or mincemeat like Quorn. Swap the oyster sauce with vegetarian oyster sauce or mushroom sauce.

Vegetables

You can add any of your favorite stir fry vegetables cut into small cubes. I usually love to make with carrot, onion, green peas, sweet corns, and spring onions. A simple tip is not to put all the vegetables at one time, add them in order by hard vegetables to softer ones.

Rice

A day-old leftover rice is ideal for this recipe as it is drier and harder than freshly cooked rice. You can use fresh cooked rice, but sometimes the texture can be mushy when you stir fry it. Although we love to use Thai jasmine rice for fried rice recipes, it's great with any long grain or medium grain rice too.

Traditional Wok or Non-stick?

If you a fan of unique wok hei flavour you can use traditional well-seasoned Chinese wok like carbon steel wok. It can stick sometimes depend on the ingredients you use, you need to add a bit more oil than a regular non-stick pan. We use carbon steel wok sometimes as my husband really likes the wok char flavour but for the days that I don’t have much time for cleaning or seasoning the wok I just use my non-stick wok.

But you don't need to be a master in wok skills to make this fried perfectly. For home cooking, we can make it happen with any pan, non-stick, or skillet we already have in our kitchen. You just need to make sure to cook it on medium or high heat based on the pan and stove you use. Do not overcrowd the pan and give the rice enough spice to cooked through.

How to make sausage fried rice

Cut carrot and sausage into small cubes. Cut spring onions into thin slices. Separate the white part and green part. ( add the green part of spring onions in the final step. )

In a large wok or pan add one tablespoon of butter/vegetable oil in a pan and stir fry the eggs, then push to one side of pan.

Add another tablespoon of butter and stir fry the white part of spring onions for a few seconds. Follow with the carrot cubes and sweet corns and stir fry for 1 min. Add the sausages and continue to cook for 1-2 mins. Toss well to combine all the ingredients evenly.

Place the cooked rice, pour the soy sauce, oyster sauce and sesame oil. Stir fry with medium high heat.

Add green part of spring onions and salt to taste. Continue stir fry for another 1 min.

Remove from heat and transfer to serving plate. Best to serve immediately. Enjoy!

  • 1 Large Bowl Cooked Rice
  • 3 Medium size Sausage
  • 2 Egg whisked
  • ½ Cup Sweet Corn
  • 1 Carrot
  • 3-4 Spring Onions
  • 2 Tbsp Unsalted butter
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Sesame Oil 
  • Salt to taste

Instructions

  • Cut carrot and sausage into small cubes.
  • Cut spring onions into thin slices. Seperate the white part and green part. ( add the green part of spring onions in the final step. )
  • Add one Tbsp of butter in pan and stir fry the eggs and push one side of pan.
  • Then add another Tbsp of butter and stir fry the white part of spring onions for few seconds. Then add the carrot cubes and sweet corns and stir fry for 1 min.
  • Add the cut sausages and stir fry for 1-2 mins. Mix all the ingredients well.
  • Add the cooked rice, then pour the soy sauce, oyster sauce and sesame oil. Stir fry with medium high heat.
  • Add green part of spring onions and salt to taste. Continue stir fry for 1 min.
  • Delicious sausage fried rice is ready! Enjoy!

Notes

  • Suggest using a day old jasmine rice or any pre-cooked long grain or medium grain rice for this fried rice recipe.
