My dad always said you don’t need a traditional wok or loads of oil to make restaurant-style green bean stir fry at home. Just blanch the beans first, then finish them quickly in a hot pan for bright, crisp, flavorful green beans every time.
He never followed recipes or used fancy tools, just instinct and simple home-cook tricks. How to Choose and Prepare Green Beans
For the best stir fried green beans, start with good-quality beans. Look for ones that are bright green in colour, firm and snappy when bent, and free from wrinkles or brown spots.
Avoid limp or dull beans that look as if they tend to turn mushy once cooked.
Rinse them thoroughly under cold running water to remove any dirt, then trim off both ends, something my dad always did carefully, one handful at a time. If the beans are very long, you can cut them in half for easier eating, but keeping them whole also works beautifully, just like you’ve had at Chinese restaurants.

- 2 tbsp cooking oil

- Blanch the beans first, not deep-fry: I always do this because it uses less oil and keeps the beans bright and crisp.
- Use any pan you have: I’ve made this in a wok, a cast-iron pan, and even a non-stick, they all work just fine.
- Don’t be shy with the heat: A hot pan gives you that restaurant-style flavour without extra effort.
- Keep an eye on the garlic: As soon as it turns golden, take it out, that’s when it smells amazing and hasn’t gone bitter yet.
How to Stir Fry Green Bean with Garlic

- Wash and Cut: Wash and trim off both ends of the green beans.

- Blanch the Beans: Bring a pot of water to a boil, add 1 tablespoon of oil and ½ teaspoon of salt, then blanch the beans for 2 minutes.
Drain well and set aside. This step keeps the beans vibrant green and crisp without frying them in lots of oil.

- Sauté Garlic: Heat a little oil in a pan over medium heat. Add the minced garlic and sauté until golden and fragrant, then remove it immediately from the pan and set aside.
Be careful not to overcook the garlic, it burns very quickly, and once it turns bitter, it can ruin the entire dish.

- Stir Fry and Season the Green Beans: Add the blanched green beans to the same pan. Season with salt, pepper, and chicken powder. Turn the heat up high and stir-fry for 2-3 minutes until the beans are fragrant and lightly charred.
Drizzle in the sesame oil, toss in the fried garlic, and serve straight away while the beans are hot and crisp.

What other beans can I use for this recipe?
If you’re not really a green bean person, don’t worry, this recipe is very flexible.
String beans are simply another name for green beans so that you can use either.
You can swap regular green beans for long beans, French beans, snow peas, sugar snap peas, mangetout, or any other fresh green vegetables you enjoy.
Can I make it spicy?
If you like a little heat and extras, you can add sliced fresh chillies while stir-frying, mild red chillies for gentle heat, or Thai bird’s eye chillies if you like it properly spicy (that’s my favourite). A drizzle of crispy Homemade Chilli Oil at the end or a sprinkle of dried chilli flakes also works perfect.
If you want to dress it up just a little, add simple toppings. Crispy fried onions, toasted sesame seeds or a handful of roasted crushed peanuts gives the dish extra texture.
Why do you need to add MSG or chicken powder?
It helps boost the umami and gives the dish that familiar, taste you often enjoy in Chinese restaurant stir fry dishes. But that is completely optional, feel free to leave it out, if you prefer to keep it simple.
How We Prep Ahead and Save Leftovers
To get ahead for dinner, you can blanch the green beans in advance and keep them chilled in the fridge. Fry the garlic separately and store it in an airtight container so it stays fragrant and crisp. When you’re ready to eat, simply toss everything together in a hot pan with the seasonings and finish with a drizzle of sesame oil.
If you have leftovers, let them cool completely before storing them in an airtight container in the fridge. They reheat easily in the microwave or in a pan, making a quick and tasty side dish for the next day.
