What's your favourite quick pasta recipe? This chorizo pasta is one of our family's favourites that needs very few ingredients and all are pantry-friendly.
We always have spaghetti in our pantry for quick pasta days and I love to try different pasta recipes. In this recipe, I am sharing simple pasta recipe loaded with chorizo and prawns. Do not need loads of tomato sauce or Italian herbs needed. Sometimes simplicity tastes best.

Ingredients we need
Prawns - I usually add large king prawns or tiger prawns in this recipe. You can use fresh or frozen prawns/shrimp of your choice, peeled and deveined.
Chorizo - Chorizo is a Spanish fermented, cured sausage, usually spiced with paprika. You can simply swap it with your choice of sausage.
Spaghetti - Use spaghetti, fettuccine, linguine or your favourite long pasta.
Paprika - Use smoked paprika for a subtly sweet and peppery flavour. If you don't have smoked paprika, simply swap it with regular paprika, dried red chilli flakes or chilli powder.
Garlic - Do not add onions to this recipe. Add 3-4 cloves of chopped garlic for an aromatic garlicky result.
Lemon - Add a splash of freshly squeezed lemon juice for a refreshing zesty taste. You can also add a dash of lemon zest to your taste, but it's totally optional.
Parsley - Stir in finely chopped parsley or basil leaves to bring more flavour and colour to the dish.
Olive Oil - I usually add extra virgin olive oil to my pasta recipes. You can simply swap it with butter, or regular olive oil.
How to make Prawn and Chorizo Pasta
- In a large pot of salted water, boil the pasta by the packet instructions. Reserve one cup of pasta boiling water for later use. Once it is cooked, drain water.
- Meanwhile the pasta is cooking, you can prepare the prawn and chorizo. Heat the pan into medium-heat, drizzle olive oil and saute the chorizo for 1-2 minutes.
- Remove from pan and set it aside.
- Add prawns in the remaining oil. Once the prawns turn pink turn sides.
- Next add chopped garlic and stir it well for few seconds. Season with salt, pepper and smoked paprika. Stir it well.
- Now place the chorizo and boiled pasta in the pan.
- Season with salt and pepper to taste. Pour half cup of reserved water in. Add more water if needed. Toss well to combine everything evenly, until there is no water in the pan.
- Turn off the heat, squeeze fresh lemon juice and sprinkle chopped parsley. Transfer to serving plate and garnish with freshly grated parmesan and parsley if desired.
Recipe Tips
- Do not overcook the pasta as it can become soft and mushy. Always check the packet instructions as pasta cooking time can be varied.
- Season the pasta boiling water with a generous amount of salt. Salted water creates a tasty pasta noodles.
- Chorizo and prawns take only 1-2 minutes to cook. Slighty brown the chorizo on both sides and remove from heat to prevent it from overcooked.
- You don't need to add the exact same ingredients used in this recipe. Create your own-style sausage pasta by adding your favourite type of sausage, seafood or choice of protein.
Frequently asked questions
Add 150 ml of heavy/double cream or creamy mascarpone cheese after sauteing the garlic and prawns and make it creamy pasta with prawns and chorizo.
This recipe does not contain white wine as I tried to use fewer ingredients as possible to make it simple. If you wish to add white wine, add a splash just after sauteing the prawns and garlic. The acidity of the wine will bring more flavour to the dish.
This recipe contains a hit of heat from the smoked paprika. You can add extra dried red chilli flakes ( dried crushed chillies ) to bring more heat to the pasta.

Notes
- Smoked paprika - Smoked paprika has a distinct peppery, smoky flavour. If you cannot get it, use regular paprika or chilli powder.
- Can you make it spicier? Add dried crushed chillies after adding the prawns to bring more heat to the dish.
- Chorizo - You can simply swap it with your choice of sausages, seafood or chicken slices.
- Vegetarian option - Use plant-based or vegetarian chorizo or sausages and omit the prawns.
- Can you reheat? If you have any leftovers, store them in an air-tight container and keep them in the fridge. It usually lasts in the fridge for a couple of days. To reheat the pasta, add a splash of water and toss it well, then reheat in the microwave or on the stovetop until piping hot.
