Ingredients

  • Chicken: Choose your choice of boneless chicken breast or thigh. Slice it thinly or cut it into small bite-size pieces.
  • Hoisin sauce: It has a rich, sweet, and umami taste and it's a star of this dish. It brings depth and sweetness to the sauce. You can buy it at supermarket Asian aisle or Chinese grocery stores.
  • Vegetables: You can use any of your favourite stir fry vegetables. Bell peppers, onions, and spring onions are common choices. You can also add broccoli, tenderstem broccoli, carrots, and snow peas. Veggies bring both colour and texture to the dish.
  • Fresh herbs: Use freshly chopped garlic and ginger for the best aroma.
  • Soy Sauce: Is a classic condiment that contributes saltiness and umami to the dish. Opt for low-sodium soy sauce if you're watching your salt intake.
  • Sesame Oil: A drizzle of toasted sesame oil enhances the overall flavour profile with its nutty aroma.
  • Cornstarch: Cornstarch creates a glossy stir-fry sauce and it helps coat the chicken and vegetables evenly.
  • Cooking Oil: Use a high-heat cooking oil like vegetable or peanut oil for stir-frying. It helps achieve that delightful sear on the beef and veggies.

How to cook it

  1. Marinate the chicken: In a bowl, combine chicken with light soy sauce, baking soda, rice vinegar, corn starch, and baking soda. Allow it to marinate for 10-15 minutes. This marination keeps the meat moist and tender.
  2. Prepare sauce: Add hoisin sauce, light soy sauce, dark soy sauce, rice vinegar, water, cornstarch, sugar, and sesame oil in a small bowl. Whisk until sugar is dissolved.

  1. Heat the pan: Heat a large wok or a skillet over medium-high heat. Drizzle a tablespoon of cooking oil and swirl it around to coat the bottom evenly.
  2. Sear the chicken: When the oil is hot and shimmering, add the marinated chicken to the wok or skillet. Spread it out in a single layer to ensure proper searing. Let it cook undisturbed for 1-2 minutes, allowing it to develop a nice sear. Then, flip and stir-fry the chicken until it's no longer pink. Remove the chicken from the wok and set it aside.
  3. Cook the vegetables: Drizzle another tablespoon of oil into the wok. Toss in onions and follow with the minced garlic, ginger and crushed chillies, stirring constantly for about 30 seconds or until they become fragrant. Then, add the bell pepper and stir-fry for a minute or two, until they're are tender-crisp.
  4. Combine: Pour the prepared sauce in. Return the cooked chicken to the wok and combine it with the vegetables. Stir everything together until the sauce thickens and coats the chicken and vegetables evenly. Finish with spring onions and make a final quick toss. Remove from heat and serve immediately.

How to serve it

  • Garnish: Sprinkle some toasted sesame seeds, toasted cashew nuts, roasted peanuts, or chopped green onions on top for extra flavour and texture.
  • Serving Base: We love to serve it over a bowl of jasmine rice. You can also serve it with steamed white rice, brown rice, or noodles. For a low-carb option, you can even serve it with cauliflower rice or with lettuce.
  • Make it spicy: Add a drizzle of chilli oil or fresh chilli slices for a kick of heat.

Tips & Variations

  • What type of hoisin sauce to use? I used Lee Kum Kee brand hoisin sauce, which I found at my local supermarket. You can use any of your favourite hoisin sauce brands.
  • How to use up hoisin sauce?: if you have a leftover hoisin sauce, you can use it in many ways. From Char Siu Chicken to Hoisin Beef Noodles, you can add hoisin sauce to your stir-fries, marinades, and dipping sauces.
  • Hoisin sauce substitutes: oyster sauce, vegetarian stir fry sauce ( mushroom sauce ), or Chinese barbecue sauce can be used instead of hoisin sauce.
  • Customize the dish: Feel free to customize it with your favourite vegetables or protein like prawns, shrimp, minced meat, beef, pork or tofu.

How to store leftovers?

To store it for later use, let it cool to room temperature, then transfer it to an airtight container. Refrigerate for up to 2 days, or freeze it for longer storage. Reheat it in a skillet or microwave.

What is hoisin sauce made of?

Hoisin sauce is a perfect blend of fermented soybeans, vinegar, sugar, garlic, and various classic Chinese spices. Sweet and savoury in taste it adds umami flavour to the stir-fries and marinades.

How to cook for a big batch?

This recipe is for 2 people and you can double or triple the serving size. Simply increase the quantities of all the ingredients and use a large wok or pan. Prepare the ingredients in advance and cook in batches to prevent overcrowding the wok.

Ingredients

  • 250 grams Chicken breast Boneless chicken breast or thigh, cut thin slices
  • ½ Red bell pepper Cut thin slices
  • ½ Green bell pepper Cut thin slices
  • ½ Onion Cut thin slices
  • 2 Cloves Garlic Cut thin slices or, Finely chopped
  • 1 tbsp Ginger Cut thin strips or finely chopped
  • 2-3 Spring onion Cut 2" pieces
  • 2-3 tbsp Cooking oil Vegetable, sunflower, or neutral flavour oil

Marinade

  • 1 tsp Soy sauce Light soy or regular all-purpose soy sauce
  • ½ tsp Baking soda To tenderize the meat
  • 1 tsp Corn starch Or potato starch
  • 2 tsp Rice vinegar Or Cooking rice wine

Hoisin Sauce Mixture

  • 2 tbsp Hoisin sauce Or oyster sauce
  • 1 tbsp Soy sauce Light soy or all-purpose soy sauce
  • 1 tsp Dark soy sauce Dark thick soy sauce ( Optional )
  • 1 tbsp Rice vinegar Or rice cooking wine
  • 1 tbsp Water
  • ½ tsp Corn starch
  • 1 tsp Sugar
  • 1 tsp Sesame oil

Instructions

Prepare Ingredients and sauce

  • In a bowl, combine chicken with soy sauce, baking soda, rice vinegar, corn starch, and baking soda. Allow it to marinate for 10-15 minutes.
  • Combine hoisin sauce, light soy sauce, dark soy sauce, rice vinegar, water, corn starch, sugar, and sesame oil in a small bowl. Whisk until sugar is dissolved. Set them aside.

Stir frying

  • Heat a large wok or a skillet over medium-high heat. Drizzle a tablespoon of cooking oil and swirl it around to coat the bottom evenly. When the oil is hot, add the marinated chicken to the wok. Spread it out in a single layer to ensure proper searing. Let it cook undisturbed for 1-2 minutes, allowing it to develop a nice sear.
  • Then, flip and stir-fry the chicken until it's no longer pink. Remove the chicken from the wok and set it aside.
  • Drizzle another tablespoon of oil into the wok. Toss in onions and follow with the minced garlic, ginger and crushed chillies, stirring constantly for about 30 seconds or until they become fragrant.
  • Then, add the bell pepper and stir-fry for a minute or two, until they're are tender-crisp. Pour the prepared sauce in.
  • Return the cooked chicken to the wok and combine it with the vegetables. Stir everything together until the sauce thickens and coats the chicken and vegetables evenly.
  • Finish with spring onions and make a final quick toss. Remove from heat and serve immediately.
