Easy homemade courgette and sweetcorn fritters recipe, made with shredded courgette, sweetcorn, egg, spring onions, and flour. These crispy fritters can be served as delicious savoury snacks, or appetizers. Incredibly delicious and ready in 20 minutes!

Fritters are any type of pan-fried or deep-fried food consisting of vegetables or mixed meat, seafood, fruits, etc. This courgette and sweetcorn fritter is a perfect combination of shredded courgette, sweetcorn, spring onions, eggs, flour, and simple seasonings. Pan-fried to crispy golden perfection.

Courgette (known as Zucchini in the US) and Sweetcorn mixed together is a great savoury snacks for all vegans and veggie lovers. This recipe is neither soggy nor greasy. Plus, it's healthy! My whole family loves them because these fritters are undeniably delicious.

Why do we love this recipe?

  • Ingredients are cupboard friendly and can be easily bought at local supermarkets.
  • Budget-friendly and you can do mass cooking for the whole family and also for occasions.
  • Suitable as savoury snacks, appetizers, starters, breakfast, or side dishes for any main meal.
  • The leftovers can be saved in the fridge and can be reheated right before serving. They are still delicious.
  • It's a healthy vegetable combo. Courgette has many minerals like vitamin C, folic acid, and potassium which bring benefits to the muscles. Sweetcorn is enriched in fiber content.
  • It's a magic trick to get the kids to eat veggies because my little one who is picky about food and also hates vegetables even fell in love with these tasty courgette fritters!

What do we need

Courgette/Zucchini - You will need one medium-sized courgette for this recipe. Wash and pat dry with a paper towel, then trim off both ends.

Sweetcorn - I usually use frozen sweetcorn kernels, feel free to use tinned ones or fresh corn. Frozen sweetcorn should be defrosted and drain the water out before use.

Vegetables - You may also need spring onions and grated garlic. Moreover, feel free to add more shredded veggies like carrots, fresh chilli, potatoes, mushrooms, onions, etc.

Frying Oil - You can use olive, or add your choice of vegetable oil.

Batter ingredients - Eggs, baking powder, plain flour, salt, and black pepper.

How to make it

There are 3 basic steps to make this delicious courgette and sweetcorn fritter. First, you need to grate the courgette, then make the batter mix, and you can pan-fry them in the final step.

  1. Shred the courgette with a grater or food processor.
  2. Sprinkle a pinch of salt over the grated courgette, mix it well, and let it sit for 5 minutes.
  3. Gently squeeze the water out with your hands to remove excess moisture.
  4. Place the grated courgette in a large mixing bowl.

  1. Next, add sweetcorn, eggs, plain flour, spring onions, garlic, and baking powder. Season with salt and pepper to taste.
  2. Combine everything well until it forms a thick batter and set it aside.
  3. Heat the pan over medium heat, drizzle oil, and scoop in one heap tablespoon of batter. Gently press and flatten the surface with a spoon.
  4. Pan-fry the fritters for 2-3 minutes on each side or until crispy and golden. Then, remove it from the pan and serve it immediately on its own or serve with a dipping sauce.

Make a dipping sauce

  • To make a dipping sauce, combine Greek yoghurt, mayonnaise, garlic, chillies, and fresh lime juice in a small bowl. Add a pinch of salt and freshly ground black pepper to your taste.

Top Tips

  • In choosing a courgette, Look for medium-sized, firm, dark green-skinned ones. Avoid using overgrown ones because they can be more bitter than the smaller ones.
  • If you want to use fresh corn, try to search for the ones with green husks, avoid choosing husks that start to get yellow or dry. Choose bright yellow kernels and avoid dried or brown ones. (Or you can use canned or frozen sweetcorn simply to be more convenient.)
  • If the batter is too thick to combine, a splash of water or milk can be added.
  • Extra protein sources like bacon, sausage, and small prawns can be also added.
  • While pan-frying, do not overcrowd the pan and fry with batches if necessary.
  • This recipe makes 8-10 fritters. You can double or triple the ingredients if you are preparing a big batch.

Frequently asked questions (FAQs)

Can you freeze the fritters?

Yes, you can freeze the leftovers in a freezer-safe bag or container for later use. Place the parchment paper between each patty.

How to reheat it?

To reheat the fritters, place them in the pre-heated air-fryer or oven at 180C / 350F for 4-5 minutes or until crispy again.

What to serve with Courgette and Sweetcorn Fritters?

Apart from this chilli yoghurt dipping sauce, you can also serve it with sweet chilli sauce, hot chilli sauce, spicy mayo, tomato ketchup, tartar sauce, sour cream, etc.

Equipment

  • Flat bottom non-stick pan or skillet
  • Large mixing bowl

Ingredients

  • 1 Courgette About 300 gram ( 10.5oz)
  • 150 gram Sweetcorn kernels About 5.3 oz, Frozen, tinned or fresh ( see details in note )
  • 100 gram Plain flour
  • 2 Eggs
  • ¼ tsp Baking powder
  • 2 cloves Garlic Finely chopped/minced
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 2-3 tbsp Olive oil Or vegetable, canola, sunflower oil, etc

Chilli Yoghurt Dipping Sauce

  • 3 tbsp Mayonnaise
  • 3 tbsp Greek yoghurt
  • 1 Chili pepper Finely chopped
  • 1 tsp Lime juice Or lemon juice
  • 1 tsp Grated garlic
  • Salt & pepper to taste

Instructions

Prepare the batter

  • First, grate the courgette with a grater or food processor. Sprinkle a pinch of salt in the grated courgette and set it aside for 5 minutes, then squeeze the water out.
  • Place the grated courgette, sweetcorn, eggs, plain flour, spring onions, garlic, and baking powder in a large mixing bowl. Season with salt and pepper to taste. Combine everything well until it form a thick batter and set it aside.

Fry the fritters

  • Heat the large non-stick pan or skillet over medium heat, drizzle 2 tbsp of oil.
  • Spoon in one heap tablespoon ( about 2 tbsp ) of courgette batter to the pan, gently press and flatten it with a spoon. Add another scoop and leave enough space between each fritters.
  • Pan fry the fritters for 2-3 minutes until crispy golden then filp and fry another side.
  • Remove from pan and serve immediately on its own or serve with a dipping sauce.

Make Dipping Sauce

  • To make a chilli yoghurt sauce, add the dipping sauce ingredients in a small mixing bowl and combine everything well. Adjust the salt and pepper to taste.

Notes

  • If the batter is too thick to combine, you can add a splash of water or milk.
  • Sweetcorns - you can either use frozen, fresh, or tinned sweetcorn kernels. Defrost and drain the water out before adding in the batter mix.  
  •  You can add other shredded vegetables like carrots, potatoes, mushrooms, onions, etc.
  • Can also add an extra protein like bacon, sausage, small prawns, etc.
  • Instead of this chilli yoghurt dipping sauce, you can serve these fritters with sweet chilli sauce, hot chilli sauce, spicy mayo, tomato ketchup, tartar sauce, sour cream, etc.
  • You can also serve it as a breakfast with poached egg on the top.
  • Freezing and reheating - You can freeze the leftover fritters in a freezer-safe bag or container for later use. Place the parchment paper between each patty.

    I made these and they're really tasty!
    The recipe doesn't include how much spring onion to use, so I used a single one, could probably use more if you wanted a stronger flavour?

    Love this fritter so much. I daughter love this fritter so much even she does not like courgette. Can I use any other vegetables instead of sweetcorn?

      Thanks, Brenda, you can omit sweetcorn and add shredded carrot, sweet potatoes, potatoes, mushroom, etc.
