Prawn and Chorizo Pasta

Easy prawn and chorizo pasta recipe with spaghetti, king prawns, chorizo and simple seasonings. Simple but not bland. Packed with garlicky prawns and smokey chorizo flavour. Perfect quick and easy pasta dinner everyone will love! Ready in 20 minutes!

Ingredients

  • 150 g Chorizo Or choice of sausage
  • 150 g Prawn
  • 150 g Spaghetti
  • Salt to taste
  • Pepper to taste
  • ½ tsp Smoked paprika Or paprika
  • 3-4 cloves Garlic Finely chopped
  • 2-3 tbsp Olive oil
  • 1-2 tbsp Lemon juice or to taste

To serve

  • Parmesan Freshly grated
  • Parsley Finely chopped

Instructions

  • In a large pot of salted water, boil the pasta by the packet instructions. Reserve one cup of pasta boiling water for later use. Once it is cooked, drain water.
  • Meawhile the pasta is cooking, you can prepare the prawn and chorizo.
  • Heat the pan into medium-heat, drizzle olive oil and saute the chorizo for 1-2 minutes. Remove from pan and set it aside.
  • Add prawns in the remaining oil. Once the prawns turn pink turn sides, stir in chopped garlic. Season the prawns with salt, pepper and smoked paprika. Stir it well.
  • Now place the chorizo and boiled pasta in the pan. Season with salt and pepper to taste.
  • Pour half cup of reserved pasta water in. Add more water if needed.
  • Toss well to combine everything evenly, until there is no water in the pan.
  • Turn off the heat, squeeze fresh lemon juice and sprinkle chopped parsley.
  • Transfer to serving plate and garnish with freshly grated parmesan and parsley if desired.

Notes

  • Smoked paprika - Smoked paprika has a distinct peppery, smoky flavour. If you cannot get it, use regular paprika or chilli powder. 
  • Can you make it spicier? Add dried crushed chillies after adding the prawns to bring more heat to the dish.
  • Chorizo - You can simply swap it with your choice of sausages, seafood or chicken slices. 
  • Vegetarian option - Use plant-based or vegetarian chorizo or sausages and omit the prawns. 
  • Can you reheat? If you have any leftovers, store them in an air-tight container and keep them in the fridge. It usually lasts in the fridge for a couple of days. To reheat the pasta, add a splash of water and toss it well, then reheat in the microwave or on the stovetop until piping hot.
