Sesame Prawn Toast

Ingredients

Ingredients

  • ½ cup Sesame seeds About 6-8 tbsp
  • Oil for frying ( vegetable, canola, sunflower, peanut or any neutral flavoured vegetable oil )

Prawn Fillings

  • 200 g Prawns ( Peeled and deveined ) About 7oz Prawns or Shrimp
  • 4-5 white bread
  • 1 Egg white
  • 2 Spring Onions Cut thin slices
  • 1 tsp Garlic Paste or finely grated

Seasonings

  • 1 tbsp Sesame oil
  • 1 tbsp Corn flour or corn starch
  • ¼ tsp White pepper
  • ¼ tsp Salt
  • 1 tbsp Light soy sauce
  • 1 tsp Sugar

Dipping Sauce

  • 3 tbsp Mayonnaise
  • 1 tbsp Chilli sauce ( hot or mild )
  • ¼ tsp Chilli flakes or Japanese Shichimi chilli (Optional)
  • 1 tsp Lime juice

Instructions

  • To make the prawn fillings, add the prawns, egg white, spring onions, garlic, and seasoning ingredients in the food processor. Blend it into a smooth paste.
  • Place the sesame seeds in the plate and set aside.
  • Cut the bread crust out and cut in the middle into triangle shapes.
  • Place about 1 tablespoon size fillings on the bread, spread the fillings evenly on the bread by using a butter knife.
  • Dip the filling side down gently in the sesame seeds until the fillings are coated with sesame seeds evenly. Repeat process to remaining bread slices and set aside. Gently toss the excess sesame seeds out before frying.
  • Heat the oil into medium heat about 320°F, test with a wooden chopstick or a piece of bread, once the oil bubbles start sizzling steadily it's ready to fry.
  • Fry the filling side down until crispy and turn sides and fry until golden brown.
  • Remove from pan and place it on the paper towel to soak the excess oil.
  • Garnish with chopped spring onions. Serve immediately with spicy mayo, sweet chilli sauce or any of your favourite dipping sauce.

Spicy Mayo

  • To make a spicy mayo mix the mayonnaise, chilli sauce, chilli flakes and lime juice in a small bowl.

Notes

  • Bread: You can use white, sourdough, or wholemeal sandwich bread. Any dry stale bread or baguettes are great to make prawn toast as they don't absorb the oil much.
  • Baking/ Air Frying Option: you can bake in an oven or in an air fryer. Place the toast filling side up on the baking tray. Spray or brush a bit of oil on the toast and bake in 400° F preheated oven for 8-10 minutes or until crispy. Turn sides in halfway and bake until crispy golden brown.
  • Pan Fry Option: If you wish to pan fry it, use a large flat pan or skillet, drizzle oil to slightly cover the pan, and fry the prawn side down first. Once it is crisp and golden, flip and fry another side.
