Spicy Basil Chicken (Pad Kra Pao)

Thai style spicy basil chicken stir fry recipe made with chicken mince, aromatic basil, and delicious stir fry sauce. Spicy, salty, sweet and savoury flavour packed together in one dish. Serve over a bowl of plain rice and fried egg to complement the dish.

Ingredients

Ingredients

  • 350 g Chicken mince thigh/breast About 12oz ( Or chicken small dices )
  • 1 cup Basil Leaves  Thai Holy Basil/Sweet/Italian Basil 
  • 4-5 cloves Garlic
  • 4-5 Bird eye chillies
  • 2 Eggs
  • ¼ tsp Black Pepper
  • 1-2 tbsp Vegetable oil

Stir Fry Sauce

  • 1 tsp Light Soy Sauce
  • 1 tbsp Oyster Sauce
  • 1 tbsp Fish Sauce
  • ½ tsp Dark Soy Sauce
  • 1 tbsp Brown/White Sugar

Instructions

  • Finely chop the garlic cloves and bird eye chillies.
  • Add all the sauce ingredients in a mixing bowl. Mix well and set aside.
  • Heat the pan to medium heat, drizzle oil and add the chopped garlic and stir for few seconds then add the chopped chillies and stir for few seconds.
  • Add the minced chicken and stir fry with medium-high heat till the chicken colour changed, then add the stir fry sauce mix. Continue stir fry with medium high heat for 1-2 min till the chicken is starting to be glossy.
  • Add the basil leaves and black pepper and stir for 1 min. Remove from heat.
  • Served over a bed of steamed jasmine rice and topped with Crispy fried egg .
  • Delicious Spicy Basil Chicken is ready!

Notes

  • To make a crispy fried egg with runny yolk you need to add more oil than a regular fried egg. ( about half a cup of oil ). Fry with high heat to medium-high heat till the edges are crispy golden brown.
  • If you cannot find Thai basil, you can use holy, sweet, or Italian basil. These basil are the nearest substitute.
  • If you do not consume fish sauce, you can soy sauce or salt to taste.
